Ingredients:

  • 2 cups flattened rice (poha)

  • 1 medium-sized onion, finely chopped

  • 1 green chili, finely chopped (adjust according to your taste)

  • 1/4 cup peanuts

  • 1/4 cup fresh coriander leaves, chopped

  • 1 teaspoon mustard seeds

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon red chili powder (optional)

  • Salt to taste

  • 2 tablespoons vegetable oil

  • Lemon wedges for serving (optional)
  • .Sev for garnish.

Instructions:

  • Rinse the flattened rice (poha) under cold water for a few seconds until it becomes soft. Drain the water completely and keep it aside.

  • Heat oil in a large pan or kadai over medium heat. Add the mustard seeds and cumin seeds and let them splutter.

  • Add the peanuts and sauté until they turn light golden brown.

  • Add the chopped onion and green chili to the pan. Sauté until the onion becomes translucent.

  • Add turmeric powder, red chili powder (if using), and salt. Mix well.

  • Reduce the heat to low and add the rinsed flattened rice (poha) to the pan. Gently mix everything together until the spices are evenly coated with the poha. Be careful not to break the poha.

  • Cover the pan with a lid and let it cook for about 3-4 minutes on low heat. This will allow the flavors to meld together and the poha to become soft.

  • Remove the lid, give it a gentle stir, and cook for another minute or two.

  • Turn off the heat and garnish the poha with fresh coriander leaves and Sev.

  • Serve hot with lemon wedges on the side, if desired. Squeeze some lemon juice over the poha before eating for an extra tangy flavor.
