USES OF INDIAN SPICES
Spices have a special place in Indian cuisine, most of India's population is vegetarian and Wheat, Rice, Jowar, Millet, Maize and Ragi are their main food. All these are starchy cereals, whose taste fades. To overcome this deficiency, lentils or vegetables containing spices are required. Spices perform the following functions in food :-
1. Using spices in food to make food palatable:- Food prepared without spices is bland and not liked by common Indian.
2. Spices to make food aromatic:- -Spices to make food aromatic Aromatic food is necessary, it increases appetite and accelerates the secretion of digestive juices.
3.To give natural color to the food:- There are various spices like turmeric, red chili, Ratanjot, saffron, by using these we can give different colors to the food, in this way, the food cooked with the use of spices becomes more elegant and attractive. also spices helps in increasing appetite.
4. Medicinal Use of Spices:- Spices have been used as medicine since ancient times. In Ayurvedic system of medicine, it is widely used for the treatment of diseases. Like ginger, asafoetida, garlic, song, cumin, black pepper are the main spices of this category.
